The Health Benefits of Artichokes

With their spiky leaves, thick stem, and large size, artichokes can be intimidating. Many people assume preparing and eating artichokes is complicated and time-consuming. But don't let their appearance scare you off - they're actually easy to prepare and eat, are delicious, and have a surprisingly long list of health benefits.
For example, scientific research indicates that artichoke consumption may help keep your cholesterol level in check. A 2008 study looked at 75 adults with elevated levels of blood cholesterol. One group of the study subjects consumed 1280 mg of artichoke leaf extract (ALE) daily for 12 weeks. Another group consumed a placebo. The researchers found that ALE consumption resulted in a statistically significant difference in total cholesterol after 12 weeks.
